The air goes stale in specific places
With the HVAC off or running minimally, air stops moving through closets, pantries, laundry rooms and cabinets under sinks. Those spaces develop the smell people describe as a closed up house, and it transfers to whatever you put in them. Cleaning the interiors and airing them out removes it. Adding a fragrance does not.
Drain traps dry out
This is the one that catches everybody. The P trap under a sink or shower holds water that blocks sewer gas. In a guest bathroom nobody used for two months, that water evaporates and the smell comes up. It is not a plumbing fault and it does not need a plumber.
